Fresh local tomatoes are a treat reserved for summer and fall in California. When winter and spring come around, the most sustainable option is to use dried tomatoes. I also try to peel and freeze or can some of my harvest in the summer to use in winter soup and stew recipes. Check out some of my tomato recipes for ideas on how to cook with tomatoes throughout the year.
Nutrition Tip: Tomatoes, especially tomatoes that are cooked and eaten with some oil, supply lycopene which is a phytochemical known to be a powerful antioxidant. Research suggests that diets high in lycopene may reduce the risk of certain cancers, especially prostate cancer.
