Fresh local tomatoes are a treat reserved for summer and fall in California. When winter and spring come around, the most sustainable option is to use dried tomatoes. I also try to peel and freeze or can some of my harvest in the summer to use in winter soup and stew recipes. Nutrition Tip: Tomatoes, especially tomatoes that are cooked and eaten with some oil, supply lycopene which is a phytochemical known to be a powerful antioxidant. Research suggests that diets high in lycopene may reduce the risk of certain cancers, especially prostate cancer.
